1 egg
1 tbsp granulated sugar
100 ml cream (40%)
50 g fondant chocolate
Melt the chocolate au bain-marie (double boiler).
Beat the egg yolk with sugar until pale and fluffy using a mixer with whisk attachment.
Whip the cream until soft peaks form using a clean whisk attachment.
Beat the egg white until stiff peaks form.
Fold the whipped cream into the egg yolk mixture.
Fold the melted chocolate into the cream.
Finally, gently fold in the beaten egg white to keep the mousse airy.
